A highlight for me has been coming from Scotland and working behind great bars within Holland and Mexico. The language barrier was at first, a daunting prospect, but actually became a talking point. This is something I have enjoyed over my time, as well as working a long side great bartenders, and chefs. I am determined to better myself in every aspect of hospitality, it’s this drive and willingness and hunger to learn that makes me stand out from the rest. I have travelled far and wide to discover more and experience a product first hand, rather than read about it. My months traveling from Costa Rica to Mexico and Chile to Peru were incredible and I truly experienced Rum, Mezcal, Pisco as I went. That, ofcourse, will forever be a highlight of my life.
I have a background in Design, having studied Illustration for 4 years. This creativity I have carried through to my bartending, and I believe that every element of a serve must be thought through to enhance the experience we, as bartenders, sell. The glassware paired with a drink is one of the most crucial factors to this. It is the vessel to which flavors are combined, and to which we serve, months of trial and tribulations of experimentation to produce the desired cocktail. It must be served correctly and creatively to further highlight the creativity of the bar team and menu.
